Acetaia del Casato Bertoni is a relatively young vinegar producer in Emilia-Romagna. It is based near Reggio Emilia rather than in the province of Modena, but within the designated area where Aceto Balsamico di Modena IGP may be made. Balsamic-vinegar production also has a long history in this part of the region. Bertoni's younger balsamic vinegars spend around two months in large wooden casks and show the customary agro-dolce balance of acidity and sweetness. Longer-aged versions develop a denser texture and a more concentrated aromatic profile. The range also includes Casato Bertoni Condimento di Balsamico dressings.
